 Chocolate cake with cream and chocolate glaze recipe





All of us love chocolate cakes and this kind of cake can be filled in various ways, with custard, chocolate cream, mascarpone cream, ricotta cream, milk cream, and so on. 


In this blog, we will learn how to prepare a chocolate cake and the two creams that you can use for filling the cake.


Recipe for chocolate cake filled with cream


For an excellent chocolate cake with cream, you need to prepare an excellent base to fill.


How to make a chocolate base?


So, what are the ingredients to prepare the base of the chocolate cake and the two creams that you can use for the filling?

These ingredients are for a mold of 26-28 cm diameter.


Ingredients:

  • 4 medium eggs
  • 150 g sugar
  • 100 g all-purpose flour
  • 75 g butter
  • 50 g unsweetened cocoa powder
  • 1 bag of baking powder


Preparation:

1- Preheat the oven to 180°C

2- In a large bowl beat the eggs and sugar with an electric mixer for 5 to 10 minutes. Meanwhile, melt the butter and let it cool.

3- In another bowl mix the flour, cocoa, and baking powder. And add a little with a sieve to the eggs' mixture. Mix gradually with movements from the bottom upwards. Slowly add the butter and gently mix to make it mix with the dough.

4- Grease and flour a 28 cm diameter cake mold. Pour the dough into the pan and level.

5- Bake the cake in a preheated oven for about 40 minutes. When cooked, remove from the oven, leave to cool for 10 minutes and turn out of the mold on a wire rack.


The Creams to fill the chocolate cake:

  • Now let's see the two creams that you can use to fill the cake. Choose the one you prefer and start the preparation. I want also to say that you can use other kinds of cream according to your taste.


The first cream is chocolate cream

The ingredients for the chocolate cream:

  • 250 g Dark chocolate
  • 250 ml liquid cream
  • 80 g butter


The preparation of this cream is too easy:

  • Chop the chocolate and put it in a bowl. Heat the cream until it boils then pour it over the chopped chocolate and mix well. Add the butter into small pieces and mix again to complete the preparation.


The second cream is ricotta cream:

Ingredients:

  • 200 g ricotta cheese
  • 200 ml liquid cream
  • 75 g Powdered sugar


The ricotta cream is also easy to prepare:

  • Put all the ingredients in a bowl, mix first with a spoon, and then with the electric whisk until you get a smooth and homogeneous cream.


Now we arrive at the step to fill the cake with the cream that we prefer, but before we have to wet the base of the cake with syrup. Here are the ingredients for the syrup.

How to wet the base of the cake?

Ingredients:

  • 200 ml of water
  • 70 g sugar
  • 3 tablespoons rum, or vanilla


Preparation:

  • Heat the water and sugar in a saucepan. After 5 minutes, remove from the heat and add the rum. Mix and leave to cool.


Cake topping cream

Ingredients for the chocolate glaze

  • 200 ml of liquid cream for desserts
  • 200 gr of dark chocolate
  • 25 gr of butter


Preparation:

  • In a saucepan heat the cream until it boils. Put the chopped chocolate in a bowl and pour the hot cream on it. Mix the mixture with a spatula. Incorporate the butter, and mix again until everything is homogeneous.


Now we begin to assemble our cake:

  • Divide the base of the chocolate cake horizontally making two or three discs of the same height.
  • Place the first disc in a round tray and wet the surface with the syrup using a pastry brush.
  • Fill with the cream you prefer by using a spatula or pastry bag. Do the same with the other disc.
  • Then pour the glaze on the cake and level with the spatula. Place the chocolate cake with cream in the refrigerator to make it firm.


Serving

- This kind of cake can be served as dessert or in the afternoon during tea time. 

- In any case, regardless of the cream, you prepare, you can use also this kind of cake for a birthday or for special occasions.
