kaab ghazal and coconut sweets: recipe









The deer heel or kaab Ghazal as known in Morocco, is a type of sweet that takes the shape of The deer heel, and is one of the most famous sweets in Moroccan and is presented on many different occasions such as wedding events or at the end of Ramadan which is Eid el fiter and so on. It is a delicious sweet which is based on almonds dough. 


Besides, there is another sweet made with coconut powder which is easy to make but very delicious. There are other Moroccan sweets like Ghryba you find the recipe here which is also prepared with different ingredients: there is one based on almonds and the other made with flour, sesame, and nuts. 


Today in this blog we will give two recipes; one for the deer heel`s sweet, kaab Ghazal, and the other one for the coconut sweet or "snowball cookies".  



Deer heel, "kaab Ghazal", recipe.


Kaab Ghazal is known as one of the prestigious sweets in morocco and no wedding event or other festivity can do without it. Now let go to discover the ingredients and the preparation for this delicious sweet.


What are the ingredients?


The dough


  • 1 cup flour
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 1/2 tablespoon blossom
  • One cup of water more or less depends on the flour quality


Almonds filling


  • 400 g ground almonds (should be blanched, skinned, and ground until we get a moldable paste)
  • 1/2 cup sugar
  • 1/2 teaspoon of cinnamon
  • 2 tablespoons blossom water
  • 1 teaspoon of butter


How to prepare the Kaab Ghazal?


 The filling preparation


- Mix almonds, sugar, and cinnamon, then add the flower water and butter and knead by hand.

- We form the fillings in the form of small fingers.


The dough preparation


- Sift the flour and salt, add butter and flower water and rub by hand.

- Gradually add water and knead until it becomes soft rubber dough.

- Extend the dough on a flour-sprinkled surface until it is very thin.

- Cut the dough into circles about 6 cm in diameter.

- Put the fillings in the center of the circle and then close the circle by pressing them and press the dough to take the shape of the filling and close from the sides and ends and form into a crescent shape.

- Stack in a greased tray with a little oil and bake for 15-20 minutes.

- After we get them out of the oven leave them to cool completely and decorate them with powdered sugar or leave them as they are.



Moroccan coconut  "sweet snowball" cookies, recipe.


The coconut sweet is an easy sweet but delicious, it doesn`t need a lot of ingredients. This kind of sweet can is found in every home as it accompanied the tea time of every day. 


Here are the ingredients:


  •  250 g melted butter
  •  2 egg yolks
  •  Grated lemon peel
  •  200 g fine sugar 

  •  500 g white flour
  • Apricot jam


Here is the preparation:


- Preheat the oven to 180°C

- In a bowl mix eggs, sugar, melted butter, and lemon peel, then add the flour and mix until you have a smooth and soft dough. 

- Wrap the dough with food plastic and then put it in the refrigerator for about 15 minutes.

- After that start by making small balls the size of an apricot until you finish the dough and place them on a baking sheet lined with baking paper. Bake them in a preheated oven at 180°C  for at least 10 minutes by controlling them from time to time.

- Then take them out from the oven and leave them to cool a little and then stick every two balls with jam apricot or as desired and then dipped in a hot jam diluted with a little water (should be like a syrup). You can do without this step and you can leave every ball alone and dip it directly into the hot jam diluted with water.

- After you finish all the balls, flood them with coconut to eventually get the snowball cookies.

Put the sweet in the fridge or in a cold place.

Serve them cold. 


Serving


  • In Morocco most of the sweets and cookies are served with Moroccan mint tea, especially during wedding events and other festivities, however, you can accompany them with any type of juice or even with a cup of coffee.
