The recipe for this delicious Moroccan dish is easy and not complicated as most of us think, the main things you have to do are to be patient and follow the steps carefully, and you will get your goal of preparing delicious dried prune meat tagine. Good luck!


What are the ingredients to prepare our prune meat dish?


To begin with, you need:


  • 2 kg of lamb thigh
  • 2 chopped onions
  • 3 medium chopped cloves of  garlic
  • A tablespoon of ghee.
  • 1/4 a glass of olive oil or vegetable oil to taste 
  • 1 tablespoon of turmeric 
  • 1 tablespoon black pepper 
  • 1 tablespoon ground ginger 
  • saffron soaked in a glass of water.
  • Salt

  • 500 g dried prunes

  • 4 tablespoons of sugar or honey

  • 1 tablespoon of lemon blossom water

  • 1 tablespoon of ground cinnamon


For decoration:


  • 100g of peeled and fried almonds
  • Few toasted sesame seeds.



What are the procedures to follow in preparing our prune meat dish?


  • How to prepare the meat?


1- Cut the lamb into medium-sized pieces, take a deep bowl put the meat in it. Add to it, garlic, black pepper, ginger, salt, and turmeric, and stir well. 


2- Place the bowl in the refrigerator for an hour or more so that the meat absorbs the flavors of the spices. 


3- In a cooking pan put the marinated meat, add the oil, ghee mix everything well and leave it over the fire to brown well. 


4- Then add the chopped onions to the meat and stir well until wilted. Add the saffron soaked in water and stir well for five minutes. 


5- Add a cup of water to the meat and leave it on the fire until it is done, and more water can be added if necessary. 


6- If you are using the Tagine leave it to cook in slow heat until the meat becomes soft, but if you are using the pressure pan leave on the heat for 30 to 35 minutes then switch off the fire.


Note: The broth has to be a bit thick; that means we have to get a thick sauce. If the meat is cooked, and you have still too much sauce you may take the meat out of the cooking pan and cook the sauce until it thickens. 


  • How to prepare the prunes?

- Soak the prunes in cold water for about 15 min to swell.

- Then put them in a pot over low heat with a little water, four tablespoons of sugar or honey, blossom water, a tablespoon of cinnamon, and a little butter until the sauce is concentrated.



How to serve the prune meat dish?


- When serving, arrange the meat in a tagine or a large plate with its sauce, then put the prunes up on the meat, sprinkle with a little toasted sesame, and decorate with delicious fried almonds.

- Serve your prune meat dish hot as a main dish. It is preferable to eat this dish with Moroccan homemade bread, but you may also serve it with white rice.



Tips:

- That the excess of the dish can be frozen for later use, which will help the meat to be more tender, and it can be kept for a period of time in the freezer.
