How To Prepare The Moroccan Homemade Bread "Khobz"?









Moroccan bread, ”Khobz” in Arabic, is a typical homemade bread most of the Moroccan families prepare at home and eat it with different dishes. This kind of bread is round, thick, and very different from one city to another, both in its preparation and in its ingredients.



How to make Moroccan Bread?


It can be made with different types of flour. It can be made with white flour only or it can be made with two or three different flours at the same time. However, most Moroccan families prefer to eat wheat flour bread because it is healthier and more delicious and may add some seeds like flax seeds, sesame seeds, fennel seeds, or anise seeds.  


The traditional Moroccan bread is leavened with natural yeast, making it different from other kinds of French bread which are typically leavened with baker's yeast. Natural yeast gives the bread a thicker crust and nicer appearance than other types of crusty white bread like Italian baguettes or French baguettes. It can be baked in an oven like any other loaf of bread or cooked on the stovetop and the result is approximately the same.


In this blog, we will prepare Moroccan bread with two types of flour: wheat flour and all-purpose flour, and we will add some seeds to give our bread a good taste.

The recipe of Moroccan Homemade Bread


What ingredients are in Moroccan bread?



  • 300 g all-purpose flour
  • 200 g of wheat flour
  • 10 g baker's yeast
  • 200 ml of warm water (less or more, depending on the flour quality)
  • 20 g sugar (optional, it is used to make the crust more crunchy)
  • Additional flour to work the dough
  • Salt to taste
  • 2 tablespoon sesame seeds
  • 2 tablespoon fennel seeds
  • 2 tablespoon flax seeds


What steps to follow to prepare the Moroccan bread?


1. Dissolve the yeast, sugar, and a little salt in warm water. Reserve for 15 min.


2. In your dough maker or in a large container or "Moroccan Gassaa", put the two kinds of flour and the seeds. Dig a well in the center then add the mixture of yeast and lukewarm water little by a little while mixing the ingredients.


3. Knead well for about 15 minutes. The dough should be soft and smooth (the texture is the same as that of pizza dough).


4. Cover the dough with a damp cloth and let stand for 10 to 15 mins. The dough must double in size. (the time of rest depends on the room temperature).


5. Then, crush it with your fingers to remove the air. Shape a ball or two (it depends on the size you want your bread to have), 






Then put it on a work surface. Flatten it to have a thickness of 2 cm or make it the size of the mini pizza, but ticker. Cover and wait approximately 30 to 40 mins for the dough to rise again. 








How to cook the bread?


Cooking the bread in the oven


1. Preheat the oven to 220°C.


2. With a fork, prickle your dough 3 to 4 times in different areas of your dough, put it on a baking board inside the oven, and bake your dough for 30 min or until the crust is completely golden.

If you don`t want to cook your bread in the oven there is another way to cook it on the pan so follow the steps:


1.  Heat a pan over medium heat. Place the dough on the pan.


2.  Wait for three to five minutes or until you see that the dough is no longer soft and it becomes dried turn it up down and wait until it is cooked. 








How to serve the Moroccan bread?


Eat your bread warm or cold with butter, cheese, jam, and basically with main dishes such as chicken Tagine, fish Tagine, Moroccan dried prune meat dish or other Moroccan dishes which can be accompanied by bread.
