What is Moroccan Tagine? 

  • The word Tagine is a critical portion of Moroccan cooking and has been a portion of the culture for hundreds of long times. and it has two implications. Moroccan Fish Tagine Recipe.


- The recipe will give the ingredients and the procedures we follow to prepare a delicious Fish Tagine and have a very satisfying result.


What are the ingredients for fish tagine?


  • 2 sea bream fish (each one may have 500 gr) or 1 kg swordfish cut into circles (you can also use any kind of white boneless fish if you want but it takes less time to be cooked.)
  •  2 large potatoes peeled and sliced into circles 
  • 1 large tomato sliced into circles
  • 1 green pepper sliced into circles
  • 1 red pepper sliced into circles
  • 2 peeled carrots sliced into circles 
  • 2 lemons (1 lemon and a half  we squeeze it and the other half we cut it into circles)
  • 1 large onion peeled and cut-in-circles 
  • 4 big garlic cloves, chopped finely
  •  parsley and cilantro chopped finely
  • 1 pinch of salt to taste 
  • teaspoon Pepper 
  • 1/2 teaspoon Harissa (Moroccan hot sauce) if you don`t have you can use chili
  • 1/2  teaspoon paprika 
  • 1 tablespoon tomato paste
  • 1/2 teaspoon cumin powder
  • 50 mil olive oil or vegetable oil as you want
  • A small amount of water
  • Red or green olives



What are the steps to prepare the fish Tagine?


1The first step is to clean the fish 

2. Then in a bowl, prepare the fish marinade: mix the olive oil, chopped coriander, cumin, paprika, pepper, Harissa or chili, tomato paste, chopped garlic, lemon juice, and salt, mix all the ingredients to get an excellent sauce. 

3. Add the fish or fish fillets cut into pieces to the sauce and mix with your hands, long enough for the fish to soak up the mixture. It is preferable to leave the fish for 45 to 60 minutes to absorb the sauce.

4. Take your Tagine and begin to put the vegetable. First, put your onion in the bottom of the Tagine then add your carrots potatoes. 

5. Put the fish above your vegetables then top it with the green and red peppers, tomatoes olives, and lemons, and pour the rest of your sauce above. 

6. Add the olive oil or vegetable oil and a small amount of water approximately a glass of water because the vegetable will release some water. If you need more, you can add from to time.

7. Cover the Tagine and cook it for about 40 to 60 minutes on a very soft heat control from time to time, as usual, the clay absorbs the water, so if you need some liquid just add some water from time to time


Note:

- you can cook this dish also in the oven. Use your oven pan and follow the same steps wrap the pan with aluminum foil and bake it at 350 degrees for 45 minutes. For the last 10 minutes uncover your pan and leave until it has less liquid and gets a nice color.




Serving.


  • Serve the fish Tagine as a main dish with bread and it better if you have homemade bread, or rice if you want,
