  • Morocco is rich with its sweets among these sweets there are cookies. In Morocco, there are several different cookies. Ghryba is one among other cookies known in morocco which has several variations. 

  • Ghryba can be made with almonds which are delicious and very easy to make or can be made only with flour, whether plain or semolina.

  • They are served during special occasions including weddings and big events and also are perfect with a cup of tea with friends and family members.
  • Here in this blog, we will prepare two different cookies (Ghrybas) one with almonds and the other with flour and other ingredients such as sesame.

Almond cookies (Almond Ghryba)





What are the ingredients for almond cookies (Almond Ghriyba)?


Ingredients for 20 cookies:


  • 125 g ground almonds (powder)
  • 100 g of sugar
  • 1 lemon zest
  • 1 orange zest
  • 1 tsp of bitter almond flavor
  • 1 pinch of baking powder
  • 1 egg white
  • Icing sugar



What steps to follow to prepare almond cookies (Almond Ghryba)?


  • Preheat the oven tо 180˚C.
  • In a large salad bowl, pour the almond powder.
  • Add sugar, the orange zest, and the lemon zest.
  • Add the baking soda.
  • Pour in the almond flavor.
  • Put this preparation aside for 15 minutes.
  • Meantime, whip up the white egg until firm snow.
  • Take the preparation of the almonds and gently fold the whites into it.
  • Mix until the dough dries up.
  • Form small piles and place them on a baking sheet covered with parchment paper.
  • Don't flatten the cookie, іt wіll naturally spread.
  • Sprinkle with icing sugar.
  • Bake them in an oven preheated to 180 ° to let them cook for 15 to 20 minutes depending on the oven (you must watch them, be careful not to overcook them as they risk being hard).
  • Let them cool well before handling and eating them.
  • keep in an airtight box for 2 weeks otherwise, you can freeze them to keep them longer.




Cookies (Ghryba lbehla) with flour






What are the ingredients for cookies (Ghryba lbehla)?


  • 500 g of flour
  • 125 g sugar
  • 125 g softened butter
  • 125 g of oil
  • 40 g sesame seeds
  • 40 g of almond powder
  • 1 sachet of vanilla sugar
  • 8 g of baking powder
  • 1 pinch of salt
 


What steps to follow to prepare cookies (Ghryba lbehla)?


  • Mix the butter, oil, sugar.
  • Add the almond powder, sesame seeds, vanilla sugar, a pinch of salt, and mix again.
  • Add the flour 2 or 3 times with the yeast and mix.
  • Then work the dough for about ten minutes by hand or with a pastry robot to mix all the ingredients well.
  • The dough remains crumbly we will start to make balls by taking the dough and working it well with the hands.
  • Form a ball flatten it a bit and place it on a baking sheet lined with baking paper.
  • Preheat the oven to 170 ° C static heat on from the top (very important to allow Ghryba to crackle).
  • Bake the cookies (Ghrybas) for 20 minutes and then turn on the oven from below to continue cooking for ten minutes.
  • Take out and let them cool completely before eating them. 
  • Notice that they are too fragile and can easily be broken.
