Coconut milk chicken recipe.


What are the ingredients for coconut milk chicken?


  • 1 red onion
  • 2 carrots
  • 1 tablespoon rapeseed oil
  • 600 g chicken fillet cut into pieces
  • 1 clove fresh garlic 
  • 400 ml unsweetened coconut milk
  • 1 chicken bouillon cube
  • 1 tablespoon grated ginger
  • 1 red pepper (chili)
  • 4 servings of rice noodles 
  • Salt and pepper
  • 1 lime
  • 125 g green onions 



How to prepare coconut milk chicken?


1. Peel onions and carrots and cut them into pieces. Saute the onion and carrot in the oil in a large saucepan.


2. Add the chicken and fry for a few minutes until it is golden. Add in the garlic and stir well.


3. Then pour in coconut milk and add to the bouillon cube. Cook.


4. Add the Peeled and grated ginger to the saucepan. 


5. Chop finely the chili and stir into the sauce. Let simmer for about 10 minutes.


6. Boil the noodles according to the instructions on the package.


7. Taste the stew with salt and pepper 

 
8. Add the half squeezed lime juice to the stew and cut the second half into wedges.

9. Chop the green onions and sprinkle over the sauce


How to serve the Coconut milk chicken?


  • Finally serve the rice noodles on plates in four equal portions.
  • Pour above each plate the coconut milk chicken sauce.
  • Decorate with the lime wedges.

-Serve your delicious dish for lunch or dinner.


Salad recipe.

What are the ingredients for the salad?


  • 250 g Boston lettuce
  • 25 g shallots
  • 45 g radish
  • 45 ml of Classic Vinaigrette
  • 4 g fresh chives
  • salt
  • pepper




How to prepare the Salad? 


1. Rinse and dry the lettuce leaves. Place them in a salad bowl.

2. Thinly slice the radishes, chop the French shallot and add them to the salad bowl.

3. Pour in the classic vinaigrette. Add salt and pepper to taste. Stir and add the finely chopped chives. Serve immediately with your main dish.





Tips!

- If you want you can add on the top of each plate a little cashew nut which gives a wonderful crunch!

- You can also accompany the coconut milk chicken sauce with steamed rice if you prefer that, it goes also perfectly with it.
