What is the recipe for red velvet heart with coffee cream?


There are many ideas for Saint Valentine's Day cakes that you can make in different shapes like a heart or round and different sizes big, small, or individual units, as well as decorate it with different things and tastes according to your taste. However, our Valentine's cake is going to take the shape of a heart and be decorated with coffee cream.


Ingredients for red velvet heart with coffee cream 


Ingredients for the base  (for two heart molds of 20 cm):


  • 115 g butter in-room temperature 
  • 300 g all-purpose flour
  • Two tablespoons of bitter cocoa powder 
  • 30 g liquid food coloring (red)
  • 2 eggs  

  • 1 Vanilla bean 

  • 200 g natural white yogurt  
  • A pinch of Salt 
  • 300 g Sugar 
  • 4 g Bicarbonate 


Ingredients for the coffee cream:


  • 4 tablespoons instant espresso powder
  • 500 g liquid cream 
  • 300 g White chocolate 
  • 30 g Sugar 



How to prepare the red velvet heart with coffee mousse?


  • Start with the mousse preparation:


1- In a saucepan pour half of the liquid cream, add the instant espresso powder, and sugar, and then place it on the stove and simmer gently for 10 minutes. At the same time coarsely chop the white chocolate and set it aside.


2- When the cream is amalgamated very well with the instant espresso powder turn off the stove, pour it over the chopped white chocolate, and stir until completely dissolved.  let the mixture cool, covering with cling film in contact.


3- Then whip the rest of the cream with an electric mixer, add it to the cold cream with instant espresso powder and white chocolate prepared before, then cover again with cling film and leave it in the fridge for a few hours to firm up (if you prepare it one night before it will be good). 


  • Now we prepare the cake:


- Preheat the oven to 180°C.


1- In a bowl whisk the butter and sugar until the mixture is light and fluffy. At this point add the eggs one at a time, then when they are absorbed add the vanilla, food coloring, the yogurt, and mix all.


2- Sift the flour, cocoa, and baking soda, then add the powders and salt to the mixture a spoon at a time, continuing to work with the whisk until they are completely absorbed.


3- Grease two heart-shaped bottomless molds measuring 20 cm. Place the molds on a baking tray lined with baking paper and pour the dough inside, leveling it with a spatula.


4- Then bake the molds in a preheated oven at 180°C for about 25-30 minutes the time may vary depending on your oven, so you have to check from time to time. Take the hearts out of the oven when they are cooked, and let them cool completely.


5- Once they are completely cold, with a long knife remove the irregular part from the top of the hearts and keep it aside because it will be used for the decoration. Then divide each heart in half to get a total of 4 bases, at this point fill the cake with the coffee cream prepared before. 


6- With a spatula stuff the first base, distribute the cream starting from the outline to the center, cover with another heart-shaped base and continue with a layer of cream, then continue with the other two bases and the cream until you finish with a layer of coffee cream, distributing the remaining cream even on the edges of the cake. 


7- At last, distribute the red crumbs, taken from the top of the hearts that you had set aside, on the top and edges of the cake, to get a red velvet heart, then place our cake in the fridge for a few hours before serving.

Tips!


- You can fill the red velvet heart with your favorite creams, such as Chantilly or chocolate custard. If, on the other hand, you want to make the coffee mousse even more aromatic, try to add a few cardamom berries.
