Introduction

Tagine is the traditional dish of Morocco and it gets its name from the typical glazed clay utensil in which it is slowly cooked over charcoal. However, everyone in Morocco has his or her own recipe for preparing the tagine; it may vary from one region to another as it goes back to the traditions and the ingredients that the region can find such as spices, the type of meat, and vegetables.


There is also a big difference between an everyday tagine and a tagine for the festivity and occasions, as the first is economical and modest however tasty and the second is more sophisticated, prestigious, and dazzling as in its decoration you may find fruits аѕ apples, pineapple, dried prunes, dried figs, raisin, walnuts, and fried Almonds. In a tagine pot, we can cook what we want such as lamb, poultry, fish, or vegetables, so it can be prepared with all kinds of ingredients you have even only with vegetables such as onion, carrots, potatoes, peas, olives, and so on and you will be satisfied with the good result by having a delicious modest meal but too healthy. This kind of tagine is my favorite because I like to eat a lot of vegetables during the week and also it does not take a lot of energy or time in order to be cooked. 


Moroccan meatballs tagine, Kofta Tagine in Moroccan Arabic, is also a Moroccan dish traditionally prepared as a tagine dish. These small beef or lamb meatballs are simmered in a spicy tomato sauce, then the eggs are added in the last minutes of cooking this step we can do without as the tagine kofta is very delicious as it is.

Moroccan meatballs recipes


The meatballs tagine recipe is very easy to make and it does not take a lot of time and energy on the contrary you can prepare it in a moment.



What are the ingredients for our meatballs tagine?


Here are the ingredients:


  • 1 kg minced meat
  • 400 g tomato sauce or 6 fresh tomatoes peeled and chopped
  • 2 medium onions minced
  • 2 small garlic cloves
  • 2 tablespoons tomato purée
  • 1 tbsp cumin
  • 1 tbsp. Paprika
  • 1 tsp chili
  • 1 tsp pepper
  • 1 tbsp. Ginger
  • 1/4 tsp turmeric
  • 1/2 tea glass of olive oil
  • 4 eggs
  • 1 bunch of finely chopped coriander
  • Salt to taste
  • 2 glasses of water more or less if needed



The procedures to follow in the preparation of the kofta tagine


To begin with:


1- In a large salad bowl, mix the minced meat, half the coriander, cumin, paprika, ginger, turmeric, salt, chili, and pepper. Knead well with your hand until all the ingredients are mixed then Shape the mixture into small balls of the same size.


2- Put the oil in a tagine dish, if you don't have you can use a simple pot, add the onions and sauté. Add the tomato sauce or the fresh chopped one and let simmer for 5 minutes.


3- Arrange the Kefta meatballs in the tajine, decorate with a little coriander and simmer over very low heat for 15 minutes if you see that you are in need of water add 2 glasses of water more or less. The meatballs must be tender, please baste them systematically when cooking with the cooking sauce; It is important that the sauce becomes as condensed as possible to enhance the flavors.


4- Open the tagine once the sauce is smooth, and break the eggs. Cover again and simmer over high heat. You can do without this step if you don't like the eggs because in both cases the tagine is delicious.



How to serve our Kofta tagine?


. All the dishes that are cooked in the tagine pot are served in the same dish, tagine pot, accompanied by crusty Moroccan homemade bread, and served hot.


Tips!

- If you don't have a tagine pot, you can use a normal cooking pan or a big saucepan with a tight-fitting lid and when serving try not to put the meal gently on a plate. 


- You can add to the minced meat a small handful of rice if you want.
