Apple strudel: two delicious recipes

Apple strudel is a dessert that can be prepared with strudel dough or puff pastry in which a filling based on apples, pine nuts, and raisins is wrapped, and all flavored with a sprinkling of cinnamon.

The origins of this dessert go back to ancient Greece, passing through the Assyrians and Ottomans until it reached Hungary in the sixteenth century and then passed to the Austrian Empire and reached Italy and more precisely Trentino and Sudtirol. Today strudel is recognized as a traditional Italian product.

According to the original recipe, apple strudel dough should be prepared with lard, however, in modern cooking, it was preferred to replace lard with butter, which gives it a more pleasant taste.

The traditional recipe of apple strudel provides that this dessert must be prepared using only strudel dough

For the realization of this dessert, it is necessary to prepare first the Strudel dough and then the filling. That said, but what kind of apples to use for strudel? it seems that Golden Delicious apples are to be considered the most suitable for the preparation of strudel, they hold well to heat and are soft after cooking.


Now let's see in detail all the ingredients you need both to make the real apple strudel and also the simplest versions that you can make at home easily and quickly.


Ingredients for apple strudel dough

  • 300 g all-purpose flour 
  • 2 eggs
  • 50 gr of butter
  • 1 pinch of salt
  • A little hot water 


Preparation for apple strudel dough


  • To begin with heat a little water and keep it in a glass because it will serve to complete the dough.
  • Then, we start with the dough. Arrange the flour in a fountain, form a hole in the center and add the eggs, the butter made into small pieces, and a pinch of salt. 
  • Begin to knead with your fingertips and then with your hands until the dough reaches a certain consistency. 
  • Now add a drop of water little by little and knead the dough until it comes off your hands. Form a ball with the dough by lightly anointing your hands with seed oil, this will give a certain crunchiness during cooking. Let the dough rest and move on to the preparation of the filling.



The ingredients for the filling

  • 800 g apples
  • 100 g granulated sugar
  • 30 g raisins
  • 30 g pine nuts (previously baked)
  • 2 tablespoons breadcrumbs


The preparation for the filling

- First, you have to soak the raisins in a bowl with a drop of rum or alternatively cover it with water for about 10 minutes. Now clean and peel the apples, cut them into 4 cloves, and remove from each the part of the seeds, Finely slice each clove. Place them gradually in a container and sprinkle with granulated sugar, adding the squeezed raisins and a pinch of ground cinnamon.

  • 125 g melted butter
  • Icing sugar 


How to make apple strudel?

1. Roll out the dough with a rolling pin until it is very thin, taking care to sprinkle it with flour so as not to make it stick. Wrap the dough around the rolling pin and place it on a cloth or a sheet of baking paper. 

2. Now take a knife with a smooth blade and eliminate the irregular edges forming a homogeneous rectangle. Arrange the apple filling along the entire surface and leave a part once that will serve to join the dough and make it adhere.

3. At this point sprinkle the filling with breadcrumbs and then sprinkle everything with half of the melted butter taking care not to wet the dough. Lift the cloth or sheet of baking paper from the side full of filling and wrap it on itself until it adheres to the part left empty and brushed with a drop of water.

4. Place the apple strudel on a baking sheet lined with a sheet of baking paper and brush the surface with the rest of the melted butter.

5. In a preheated oven to 180°C  bake the strudel tray in the central part of the oven, the cooking time of apple strudel is about 40 minutes. After cooking, remove the pan from the oven and let at least cool before dusting it with icing sugar. 

6. Cut into slices before serving.



Simple recipe: apple strudel with puff pastry




Apple strudel can be prepared in no time using a simple but equally good recipe. In this case, you have to use a nice roll of puff pastry ready.

Remember that on the market there are both puff pastry discs and rectangles, to make a perfect apple strudel you have to take the rectangular-shaped sheet. In this, it is much easier to wrap the filling based on apples. Let's see in detail the ingredients for a roll of puff pastry.


The ingredients for apple strudel with puff pastry


  • 600 g apples
  • 25 g raisins
  • 25 g pine nuts (previously baked)
  • 30 g breadcrumbs
  • 50 g granulated sugar
  • 50 g melted butter
  • 1 pinch of ground cinnamon
  • 1 yolk + 2 tablespoons of milk to brush the strudel


The preparation for the apple strudel


. Clean, peel and slice the apples, and put them in a bowl with sugar, breadcrumbs, raisins previously soaked and squeezed, and pine nuts. and cinnamon. Mix everything, then add the butter, and give it a further stir.

. Roll out the roll of puff pastry, and distribute the apple filling always leaving an empty part along the edge to adhere the dough. Wrap everything, brush with a drop of water the remaining empty part, and stick the edges of the dough.

. Place the strudel on a baking sheet lined with a sheet of baking paper. Brush the surface of the strudel with the yolk beaten in milk.

. Bake in a hot oven at 170°C for about 30 minutes.

. After cooking, let the strudel cool then sprinkle it with icing sugar.


How to preserve the strudel?

Apple strudel can be stored for up to 3 days. The best way is to place it in an airtight container and keep it in the central part of the refrigerator. At the time of consuming it, it can be heated in the oven to 100 °C for 10 minutes.
