How to prepare Keto lasagna?

It is, furthermore, exhausting, to give up your basic foods while following a diet, and there is no doubt that carbohydrates occupy the best types of foods we love.


So, giving it up completely is very difficult, so what about lasagna? Isn't it one of the foods rich in carbohydrates?


But what ingredients should or should not be used in keto lasagna?


Preparing keto lasagna according to certain steps, and with simple modifications by getting rid of two ingredients, the Flour and Lasagna slices, won't get you out of the keto diet at all.


As for the lasagna sheets, they can be replaced with some options, which are healthier. Zucchini and eggplant are two of the best healthy alternatives to keto lasagna.


As all of us like the delicious Italian dish lasagna bolognese and not all of us can eat it, in this article we will make two keto lasagna, one with zucchini and the other one with eggplant. We will prepare it in an easy and simple way that anyone can do these two lasagnas without difficulty.

What are the ingredients for keto zucchini lasagna?


. 4 large zucchini cut into long strips

. 1 tablespoon butter, or coconut oil

. 450 g hot or sweet Italian sausage

. 450 g ricotta cheese

. 2 tablespoons coconut flour

. 1 whole medium-sized egg

. 1/2 teaspoon salt

. 1/2 teaspoon pepper

. 1 teaspoon garlic powder

. 125 g mozzarella cheese

. 80 g Parmesan cheese

. 1 large garlic clove

. 400 g Marinara Sauce without sugar

. 1 tablespoon mixed Italian herb seasoning

. 60 g Fresh basil



What steps to follow to prepare the keto zucchini lasagna?


1. First preheat the oven to 180° C and coat a baking dish with cooking spray or butter.


2. Then cut the zucchini into slices sprinkle with salt and lay them on a  paper towel for 30 minutes.


3.  After 30 minutes, gently wring out the zucchini noodles with a paper towel one last time to extract any moisture.


4.  Heat one tablespoon of the butter or fat of choice in a large saucepan over medium-high heat, add the crumbled Italian sausage, and leave to brown a little bit.


5. Then in a small bowl put ricotta cheese, add mozzarella cheese, Parmesan cheese, egg, coconut flour, salt, garlic, garlic powder, and pepper and mix until smooth and set aside.


6. Add the Italian seasoning and red pepper flakes to the marinara bowl mix well and set it aside.


7. Add a layer of zucchini slices to the bottom of the greased plate.


8. Pour a quarter cup of the cheese mixture over the zucchini, sprinkle with a quarter of the Italian sausage, then add a layer of the sauce.


9. Repeat the process 3-4 times until the ingredients are completely gone, ending with a layer of sauce.


10. Add the remaining mozzarella cheese and sprinkle with the remaining Parmesan cheese.


11. Cover with aluminum foil and put it in the oven for 30 minutes.


12. After 30 minutes remove the aluminum foil and leave it in the oven for an additional 15 minutes until the surface takes golden color.


13. Remove from the oven and leave to rest for 5-10 minutes before serving.



Serving:


  • Sprinkle the lasagna surface with fresh basil or thyme if desired and serve.

What are the ingredients for keto eggplant lasagna?


2 Eggplants cut into slices

400 g Italian Sausage

1 tablespoon olive oil

1 chopped onion  

4 minced garlic cloves 

400 g no sugar added marinara

1 teaspoon salt

2 teaspoons dried oregano 

½ teaspoon black pepper

450 g ricotta cheese

1 large egg or two small

80 g Parmesan cheese

125 g shredded mozzarella 



How to Make Keto Eggplant Lasagna?


1- Bake the eggplant slices in a frying pan with a little oil until tender.


2- Cook and crumble sausages, then set aside.


3- Fry the onion and garlic.


4- Add the tomato sauce and meat to the onion and garlic and set aside.

5- Combine the oregano, basil, salt, pepper, ricotta, eggs, Parmesan, and half of the mozzarella cheese.

6- Take an oven dish and pour in its bottom a third of the red sauce 

7- Then a layer of eggplant.


8- Then 1/2 the ricotta mixture. Repeat these layers.


9- We finish the lasagna with a sprinkle of mozzarella cheese and bake in the preheated oven until the surface takes golden color.


10-Take it out from the oven and leave it to rest before serving.



Serving:


  • Sprinkle the lasagna surface with fresh basil or thyme if desired and serve.



Tips!


  • For eggplants make sure to use small and hard eggplants, as larger and softer eggplants can have a bitter taste.
  • Make vegan eggplant or zucchini lasagna by skipping the meat.
  • for Vegetables you can also add your favorites, just make sure to fry first, so they release their liquid.
