How to make Msemen, the Moroccan Crispy Pancake?




Moroccan Crispy Pancake or Msemen, in Moroccan Arabic, is also one of the famous and beloved Moroccan foods not only among the Moroccan people but also among the tourists who visit the country. It is a delicious dish that is classified as Moroccan pastries but with a distinct flavor and taste.

The method of preparing Msemen is easy and simple because its ingredients are, approximately the same as that of Moroccan Homemade Bread, inexpensive and readily available in every house. They are prepared with white flour, wheat flour or semolina and other ingredients that distinguish them from other baked goods melted butter to which you add oil and there are people who prepare them with olive oil from Morocco.

Msemen, the delicious crispy pancakes, are generally served as a snack, or at breakfast accompanied by a cup of mint tea or coffee. They are eaten plain or garnished with honey, butter, cheese, black olives, or olive oil. It is a dish that smells of Moroccan hospitality and friendliness.

This dish can also be stuffed, with different fillings from meat, chicken, vegetables, or cheese.

So what is the recipe of Msemen?


First to prepare this delicious dish we have to know the ingredients.


  • 200 g fine semolina or wheat flour
  • 500 g all-purpose flour
  • 1 tsp salt
  • A tablespoon of sugar
  • Lukewarm water
  • 1/2 teaspoon baker's yeast (optional)
  • Vegetable oil and melted butter to work the dough 


Now, what are the steps we should follow to prepare Msemen?


1. First, dissolve the yeast and sugar in a little lukewarm water.

2. Then in a large dish, pour the semolina or wheat flour and all-purpose flour, salt, and sugar, and mix to obtain a homogeneous mixture. 

3. Knead well, until you get a smooth and malleable dough. If you can`t prepare your dough by hand you can use the food processor. Leave on for 15 minutes.

4. In a small bowl mix an amount of oil and melted butter in order to work the Msemen dough 

5. Make small balls the size of a lemon, coat them with olive oil and place them on your work surface. Like in the picture below.



6. Spread them into large circles one by one, and at the same time brush them with a little melted butter. Fold the top of Msemen, then the bottom until you get a long rectangle.





7. Add little butter, fold the third of the Msemen on the left towards the center, then the right third towards the center to obtain a result of a rectangle resembling a pincushion.

            




8. Reserve, and continue until you have prepared all your Msemen.



9. Heat your pan, spread a Msemen, helping you with oil, and possibly semolina, and place it in the pan. It will start to puff up, and when the edges are cooked, flip with a spatula. Wait two to three minutes, and remove from the pan.



Then our Msemen are cooked.


Serving:

. Serve your warm Msemen for breakfast in the morning with Moroccan mint tea or a cup of coffee. 

You may also enjoy your Msemen plain, or garnished with honey, butter, cheese, black olives 


A recipe that takes time but is well worth it.
