What is Paella?
- Paella is a Spanish dish, easy to prepare. The name paella comes from the Valencian paella, or the Latin patella meaning pan. It refers to the wide shallow container where the food is cooked, and therefore the pan gives the name to the Spanish rice-based dish.
- This traditional dish is formed with rice and a number of other different ingredients counting on the region and therefore the sort of paella. What are the ingredients for Traditional Paella?
- 1 chicken cut into pieces
- 200 g sausage (chorizo)
- 400 g of pork loin.
- 1 l of mussels
- 500 g of fresh squid whites
- 12 langoustines
- 1 kg of rice
- 6 artichoke hearts (frozen)
- 125 g peas (frozen)
- 2 onions
- 6 garlic cloves, peeled and chopped
- 1 bunch of parsley
- 1 tablespoon of tomato paste
- 8 tablespoon olive oil
- 1 bay leaf
- 1 pinch of saffron
- salt
- pepper
What are the steps to follow to prepare the Traditional Paella?
1. Wash the mussels, and open them for 3 min in a saucepan over high heat. Then leave them in their water out of the fire.
2. Bring 250 ml of water to boiling, and put the langoustines inside the boiled water for 3 minutes. Keep them off the heat, in the covered container, while you prepare the meats.
3. Peel and chop the onions. Cut the pork loin into cubes.
4. Over medium heat, brown all these ingredients for 10 minutes in a casserole dish with the chicken pieces in 4 tbsp. olive oil. Cut the squid into slices and add them, as well as the tomato paste, bay leaf, saffron, salt, and pepper. Simmer everything for 10 minutes, covered.
5. Filter the water from the langoustines and mussels. Keep this water to make up with 2 liters of water to make the broth.
6. Bring this broth to a boil, add the peas and frozen artichoke bottoms, and cook for 10 to 12 minutes, the time to prepare the rice.
7. Cut the chorizo into slices.
8. Heat the rest of the oil in the paella pan, and add the rice, stirring with a wooden spoon, until it becomes shiny. Ladle in the broth, and arrange the ingredients: meat, squid, and vegetables. Cook the paella uncovered for 15 minutes over medium heat.
9. Sprinkle with peeled and chopped garlic with parsley, and add the chorizo cut into slices. Stir with a wooden spoon. Garnish with mussels and langoustines. Cover, let stand off the heat for 5 minutes.
Serving:
- Present the paella as it is in its baking dish immediately.
